This week's recipe is a quick and easy stir fry. This is a great dish as you can alter and sub ingredients easily to what is on sale or in season, and it is a veggie filled meal that is sure to fill you up!
*note these measurements are to feed my family of 8, so feel free to reduce by half, unless you would like leftovers!
You will need:
2 lbs of meat ( we chose to use beef, but you can use chicken, pork seafood or omit it completely for a vegetarian dinner!)
4 large bell peppers
1 green onion
2 large onions
1 package of whole baby bella mushrooms
garlic salt
Pepper
Soy sauce
Balsamic vinegar glaze
Olive oil
4 cups of cooked rice
Slice the meat into thin pieces (if using shrimp, peel and leave whole) Season meat with a small amount of garlic salt, pepper, soy sauce, and balsamic vinegar. Stir, cover, and place into refrigerator.
Slice mushrooms, onions, peppers, and green onion.
Heat olive oil in skillet or wok at medium high heat. Once pan has come up to heat, add meat, stirring frequently until almost full cooked.Remove meat from pan, and set aside in bowl. Repeat the process with your veggie mixture, adding a bit more olive oil to the pan. Cook veggies until cooked close to your preference.
Add meat back to the pan, combine with vegetables until meat is finished cooking, season to taste, and serve over rice!
